Blue Berry Muffins with Reduced Calories, Increased Fiber and More Nutrients

⅔ cup unsweetened plant-based milk

1 teaspoon apple cider vinegar
2 cups whole-wheat pastry flour
2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
½ cup unsweetened applesauce
½ cup pure maple syrup
1½ teaspoons pure vanilla extract
1 cup fresh/frozen berries
